I missed the boat to sign Emma up for preschool this year.

How's a mom suppose to know that you have to get on a waiting list in January to get your kid into preschool in September?! OUTRAGEOUS, I'm hoping it's just a Utah thing...I'm not exaggerating on this one either-so Moms beware.


Anyway, I found a local tumbling class to help her socialize outside of nursery and to give her a way to run around. It's so funny to watch these little kids, I'm very pleased with Emma and her willingness to try something new too.

Pineapple Delight

I can't remember if I blogged about my pineapple experiment oh say 5 months ago. But here's an update:


Found a pin that said you could grow your own pineapple plant from the top of the pineapple fruit itself! We tried it, followed the instructions, brought the plant to Utah with us and it's flourishing. We're not suppose to see any fruit for 18-24 months from the time of planting but so far so good. I hope we can keep the thing alive in the winter, the cat has a plant fettish...

 Oh p.s. did I mention I'm pregnant? My neighbor friend (who is pretty bold in speech) said to me the other day:

"Hey I think you finally 'popped' Erin. Isn't it nice when you're finally done with the 'I just look fat' stage and start to look pregnant?"

Why yes, in a matter of speaking it's nice to know my friends don't question if I'm simply 30 lbs overweight. I think I am finally done going wide and am starting to round out just in the belly now. I'm mere weeks away from my belly button switching to an out-tie. 

Five things Friday:

1. I love having seasons again! In Vegas it’s probably still in the 90s but in Utah the leaves are changing, the weather cools off in the morning and night, people are starting to wear pants, and I can open my windows to let the fresh air in.

2. I’m sure this is ridiculous to many of you, but I’ve never been brave enough to put time and effort into couponing or price matching. Well I think I may be ready to start. I was at Walmart buying tissues because my family is plagued with allergies and constant colds when the lady passing me in the aisle said “Puffs is on sale for $.99 this week.” I graciously said “Thank you.” and grabbed a box of Puffs. At the checkout I handed my tissues over and told the man I didn’t have an add but Puffs are on sale for $.99 this week. He didn’t say anything, just rang it up and sent me on my way! NO QUESTIONS ASKED! I think I’ll continue to start small and maybe bring adds in to back my honesty up but I’m going to give this ‘saving more money’ thing a try.

3. Speaking of saving money: I stopped my cell phone service. I was content (not super happy) with MetroPCS because of its’ month to month plan that was a guaranteed flat rate. But when we moved from Vegas to West Valley my plan didn’t cover West Valley very well. I was paying too much a month for a phone that didn’t work well. So after much research I decided to march myself into Comcast (my internet provider) and tell them I wanted to add a landline but was quoted a price that I was unwilling to pay. Basically I told them if they can’t cut me a deal I’ll be switching providers (which I really didn’t want to do, Comcast is really good). The customer service lady was incredibly helpful. She offered me a great deal (different than I was quoted over the phone) where I add a landline with my fast internet for approximately $0.55 more a month! Granted, this deal is good for only 6 months but I’m moving in 6 months so It’s ok!

4. We had a scare this week with my pregnancy. Due to some bodily details that are unnecessary for a public journal they thought I might be going into pre-term labor. My OB/GYN said if the hormone tests came back positive I could expect to see my son in less than 2 weeks. Well I got my phone call yesterday that said the test results are negative! That’s a BIG relief-not that I love being pregnant but I really didn’t want to have a baby at 30 weeks.

5. We fell behind on Emma’s immunizations and had to get caught up yesterday...7 shots. SEVEN shots people! She was a trooper but boy did I feel like the worst parent ever. They had 2 nurses taking care of business at the same time while I pinned her arms down. The nurses gave her 3 stickers, an otter-pop, and I let her watch cartoons when we got home. 

Ramona

One of my favorite series of books growing up were the Ramona books. I think they might have made a movie out of 'Ramona the Pest' I'll have to look into that.

Anyway, I was reminded of my beloved Ramona when Emma was playing dress up with her new boots and rain coat:

* Look of creative mind working

* Miss matched clothes

*Crazy unkempt hair

*Boots on the wrong feet

*Stomping around the house like she owns the place

Canned

No pictures today but I had to sum up our canning experience:

We have canned chicken, green beans, and peaches. All three were DELICIOUS!

The chicken was used as shredded toppings to BBQ pizza as well as filler with burritos. We came home, opened the can, drained it because we didn't need the yummy chicken broth (unfortunately) and the chicken literally fell apart on the cutting board. YUM

The green beans I was worried would be a little too soft for my liking. You know how canned green beans from the store are really pretty gross? Well these were soft, but not too soft and they had the best flavor: fresh and clean. We opened the jar, drained the beans and stuck them on the stove to sauté in olive oil with pepper and garlic salt. YUM

The peaches were a gift from a friend, and once they were canned we could hardly wait a week before opening them and testing the product...sweet candy from Heaven, I'm telling you this was to die for. YUM

Shakespeare Festival

Shane and I went house hunting in Cedar City several weeks ago and made a point to enjoy one of the famous events in the city-The Shakespeare Festival.


I don't know a lot about SUU but I'm guessing they, along with the local thespian clubs, are very into the arts, acting, and shakespeare.

We had a grand time! We were unable to see the beloved (and CONSTANTLY sold out Les Misérables ) but we did see Mary Stuart. In true Shakespeare fashion the play Mary Stuart was not only political, entertaining, but hilarious! The actors were well spoken and the theater phenomenal. All employees were dressed for the era, from the ladies at will call, to the men selling programs, and the little girls selling pastries. I'll be going back to enjoy what else they have to offer.
